Favorite recipes

First off forgive me any spelling errors in this post. I'm typing this on my phone as my dear MacBook is having a sleepover with Cara tonight so she use imovie.

Back to the topic: food...or more specifically recipes. I have a lot of faves. But the more I think about it, the more I realize most of my fave things to make require very simple recipes. My comfort food recipes are ridiculously simple.

Homemade applesauce is enough to pull me out of even the worst moods. It has 4 ingredients. And one of them is water. You throw apples (chopped and peeled) in a pot with some water. Boil it down, mash them, add suagr and cinnamon to taste. Then scarf it once it's no longer scalding.

The asparagus my mom makes is just as easy. Break the aspargus where it naturally breaks. Cut in 3-inch pieces. Put in a pot and boil until fork tender. Drain and add butter (probably more than I should) to taste. I love this preparation.

Pulled pork? Season some bone-in country pork ribs with salt anda pinch of garlic powder. Put them in a crockpot. Add about a half cup of water. Cover and heat on high until fork tender. Pull the meat out and pull/shred it with forks. Add your fave bbq sauce. Enjoy.

Recreating my grandma's mashed potatoes was a little more difficult but still relatively simple. Boil potaotes until fork tender. Mash with a bit of milk (or half and half), butter, salt, garlic powder, and the secret ingredient...cream cheese. Taste test frequently. Too thick? Add milk. For added creaminess, add more cream cheese.

Pulled pork, applesauce, asparagus, and mashed potaotes sounds like a great menu. Can't say I have ever made them all together? But now I totally want to. Yum. Anyone want to come visit? I know what the menu will be :)

    Kyle-Remember when I mentioned going to a Brewers game sometime this summer. I mean it. I can't say I've noticed the pulled pork parfait there before. I rarely make it past the nachos, brats, and the Heavenly Roasted Nuts Anna got me hooked on the first time she took me there. :)

April weekends

I just solidified plans for this weekend today when it hit me: my April weekends are all over the place, and well so very me. Media/fashion round up of my week TV: One issue with being a fan of a British TV show? Having to avoid spoilers until you can find a copy of it online to watch. Thankfully a twitter acquaintance posted a link to Matt Smith's debut episode of Doctor Who. I wasn't sure I was going to enjoy the show without the darling David Tennant, but it was ok. I still enjoyed it. He's no David Tennant, but I'll definitely still watch. I love the cheeky humor. I also watched the first 8 episodes of season 2 of Veronica Mars while cleaning. Is there a better way to clean? Books: I finally got around to reading "If I Stay" by Gayle Forman. It's amazing. I got quite sucked in to the book. It had me sobbing by the end. I really appreciate books that can tell a story so well that I'm emotionally tied to the characters. If you haven't read it or are not a YA reader, you should pick it up. Booklist

I found this in my RSS feed this morning and thought it was a nice way to start the day. It is a list created by the National Endowment for the Arts, and a blogger writes that they claim most American adults have read only six of these hundred books. I've read 23, but about half have been for school; however, some of those I chose to read for a class assignment. :) Here’s what you do: 1) Look at the list and bold those you have read. 2) Italicize those you intend to read. 3) Underline the books you LOVE.
