Food, mmm food

Wow, we really started out with the biggies didn't we? Music and then food :)

I'm a fan of food. I think Food Network might be one of the best tv inventions ever, well after ESPN. I love cooking. Hanging out in the kitchen with my mom, I learned a lot. Same thing with my grandmothers. If you've been around me for any length of time, you know how I have this tendency and desire to feed people. There were the choir brunches, the random cookie baking, taking in break at work, making Christmas candy, etc. I love it. I'm not always great at it, and most of what I make is pretty basic. However, slowly but surely, I'm adding to my repertoire. My newest conquest has been baking homemade bread. My favorite so far is a white Cheddar bread. When I was at Amy's we ended up taking that (while still warm) and making mini-pizzas out of it. So freaking good!

I'm always looking for new recipes. However, I really need to make the time to play around with some. Usually by the time I get home from work, I'm too tired to really do too much. I just need to plan ahead. Any exciting recipe ideas??

  1. I am a planner, but my ultimate favorite go-to recipe is super simple:

fresh pasta (Bertoli of any kind - we usually do tortolini)
zesty hines pasta sauce (the can kind)
    frozen veggies
    chicken stock

I steam the frozen veggies, as well as whatever I have fresh (usually cauliflower and asparagus) in a little chicken stock. Cook up the pasta and the sauce in 2 separate pots. I them get a huge mixing bowl and stir them all together. It's fairly healthy, delicious, little to no work, and lasts for days.

Betty Crocker put out a new cook book recently, the 300 calorie cook book, which has been really good. Easy stuff but so delicious. It's definitely geared toward the new/young cooks.

  2. This Chicken Empanada recipe is a favorite of mine and you can even freeze it to use later... really more of an appetizer, but I've eaten them with a large salad making a great meal!

  3. My grandparents are coming over for Easter brunch tomorrow, and I'm making a quiche. I've never made a quiche before...

  4. My favorite last-minute recipes hail back to college. Quesadillas, all the way. Either with a million veggies (it's almost zucchini season and I am SO excited!) or with bits of a rotisserie chicken ($5 at Meijer) and some green onion.

  5. I've found that having a couple cans of black beans and diced tomatoes around the house is great for the "I have no idea what to make" days. They can be thrown together with whatever peppers, onions, garlic, cheese, other veggies or spices I have in the kitchen to make a good dinner that always supplies leftovers for the next day.

  6. See now that's nice. I can't cook much at all. I have one or two dishes in my repertoire and that's it. I still eat like I'm in college.

  7. @Jess Yeah. I don't know how I'd survive without black beans. I like to throw a can of black beans, a can of diced tomatoes, and some taco seasoning in ground beef, a box of mac and cheese, and a little cumin in a casserole.

  8. Do you have a crock pot? You could simmer some meatballs or tritip or something in there while you're at work, boil some pasta or rice when you get home and have a delicious meal that way.

April weekends

I just solidified plans for this weekend today when it hit me: my April weekends are all over the place, and well so very me. Keeping with my new reality of being around Dubuque much more often than I have in the past, I'll be here for 3 of the 4 weekends. Ok, and by here I mean mostly here. I'll explain below. April 6-7 Julien Dubuque International Film Festival --I went to the festival last year with Gretchen. We had so much fun! We ended up seeing a different set of films than we originally thought, but it was still a blast. I was lucky enough to attend the Beloit International Film Festival with Kyle and his family last month, and this year he's coming down to spend the weekend watching films with me. Plus Nicole will be around for the weekend so she's coming along too! April 13-14 Twins game with Amy--We've got tickets to the Twins-Mets game on Sunday so I'll be driving back up to The Cities (I was just there over St. Patrick's Day weekend). I have...

About me

I feel like it's only fair I do a little bit of an intro for my new BEDA buddies: Christina , Autumn , and Nicola . For those of you who have no idea what I'm talking about, a bunch (read over 200) of us participating in Blog Every Day in April signed up to have Maureen Johnson (the Churchill of BEDA as Alex Day called her) to match us up with BEDA buddies for moral support for the rest of the month. What we do with these buddies is up to us. I'm not quite sure yet what we'll do, if anything other than comment on each other's blogs. But I feel like I do the least on my blog to give an idea of who I am. So this post is hoping to rectify that. So here goes! I'm a midwestern born and bred. At 24, I've never lived more than 200 miles (a 3 hour drive) from the city I was born in. However, my parents threw us in the van and took us on driving vacations all over the country, where I fell in love with history and roadtrips. These two loves served me well in colleg...

Booklist

I found this in my RSS feed this morning and thought it was a nice way to start the day. It is a list created by the National Endowment for the Arts, and a blogger writes that they claim most American adults have read only six of these hundred books. I've read 23, but about half have been for school; however, some of those I chose to read for a class assignment. :) Here’s what you do: 1) Look at the list and bold those you have read. 2) Italicize those you intend to read. 3) Underline the books you LOVE. (Or in my case turn them green.) 4) Reprint this list on your own blog. 1 Pride and Prejudice - Jane Austen 2 The Lord of the Rings - JRR Tolkien 3 Jane Eyre - Charlotte Bronte 4 Harry Potter series - JK Rowling 5 To Kill a Mockingbird - Harper Lee 6 The Bible (um, how many people have actually sat down to read the Bible? Like, straight through? I'm counting it because I read at least a chapter every night.) 7 Wuthering Heights - Emily Bronte (I own it, but haven't read ...
